5 Ingredient Corn Pudding Casserole

Moist and fluffy corn pudding casserole is like a sweeter, softer cornbread that is perfect for potlucks, holiday gatherings, or alongside a big pot of chili!

  • 1 box Jiffy Corn Muffin Mix (dry)
  • 1 cup Sour Cream
  • 1/2 cup Salted Butter, melted =1 stick
  • 1 can Corn, drained
  • 1 can Creamed Corn and Juices


  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1 large Egg (for fluffier texture)
  • 1/2 cup Shredded Cheddar Cheese


  • Preheat oven to 350 degrees. Grease an 8x8 or medium casserole dish with non-stick cooking spray.
  • Mix all of the ingredients together using a large spoon, and pour into the prepared baking dish.
  • Bake, uncovered for 45-50 minutes, or until top appears set, and batter is no longer shiny.


*Definitely feel free to add 1/2 cup shredded cheddar cheese in the batter or on top for some extra flavor
*You can add 1-2 large eggs to the mixture if you prefer a fluffier consistency
*This dish can also be made in a slow cooker, just cook on High for 3-4 hours, or low for 6-8 hours until no longer runny
