Easy Shrimp Lo Mein is one of the quickest and most flavorful stir fries you can make! It is super family friendly because let’s face it, every kid loves noodles! My girls are also shrimp lovers, so this recipe is a win-win. And even better yet, this meal is filled with loads of hidden vegetables! The soy-based sauce is absolutely delicious thanks to the hint of spice from the sriracha and a little sweetness from the Hoisin. The entire dish is so satisfying thanks the soft noodles, crisp vegetables, and tender shrimp. I could eat a huge bowl of these noodles with some chopsticks any time!
Preparing the Shrimp Lo Mein
Prepare the vegetables and thaw the shrimp so they are ready on hand. This is where you can substitute or add your favorite stir fry vegetables into the recipe, if desired. Next, whisk the sauce ingredients together and set aside. Additionally, used pre-cooked noodles or boil dry noodles according to package directions. Having everything ready makes all the difference in fast-paced stir fry recipes!
Heat 1-2 Tbsp of Vegetable Oil in a large cast iron skillet or work over high heat until it just begins to smoke. Sear the shrimp for 1-2 minutes per side until they have just turned pink. Be careful not to overcook the shrimp! Transfer cooked shrimp to a separate bowl and cover to keep warm.

Transfer the prepared onions, peppers, carrots, and broccoli to the pan, stir frying until they start to turn golden brown and crisp. Remove the vegetables from the pan and set aside.

Next, add the prepared noodles to the pan, and stir fry for 1 minute.

Pour the prepared sauce over the noodles and stir to coat. Transfer the vegetables and shrimp back to the pan. Toss gently to coat everything with the sauce, and reduce heat to low. Cook for just 1-2 more minutes, stirring to incorporate all of the shrimp, vegetables, and noodles.

Garnish with sliced green onions and serve immediately.

- 1 Large Wok or Cast Iron Skillet
Ingredients
- 1 lb Prepared Lo Mein or Stir Fry Noodles
- 1-2 Tbsp Vegetable Oil
- 1 lb Medium Shrimp, thawed and deveined
- 1 medium Onion, sliced
- 1 cup Broccoli, diced
- 1/2 medium Red Bell Pepper, sliced
- 1/2 cup Matchstick Cut Carrots
Lo Mein Sauce
- 1/2 cup Soy Sauce
- 1 Tbsp Sriracha Sauce
- 1 tsp Sesame Oil
- 1 Tbsp Hoisin Sauce
- 2 cloves Garlic, minced
- 1 Tbsp Oyster Sauce
Garnish
- 2-3 Green Onions, thinly sliced
Instructions
